I am extremely lazy with my cooking during the week. Once I arrive home I often dont feel like doing anything so they thought of spending forever slaving over a stove is too much. On those kinds of evenings I turn to easy recipes and one of those recipes is turmeric chicken.
This recipe is great because it is easy, cheap, tasty and relatively healthy. The spices mixed together create a lovely flavour and unlike a store bought seasoning packet there are no preservatives. The chicken itself can be paired with salad or any side of your choosing.
My only warning would be take care with the turmeric on your clothes. I have not found anything that will get a turmeric stain out. If you know a trick then please let me know!
Anyway, here is the recipe:
4 chicken thighs
2 teaspoons of turmeric
2 teaspoons of cumin
2 teaspoons of coriander/ cilantro
1 tablespoon of honey
2 tablespoons of oil
sprinkle of salt and pepper
Put together all of the spices along with the oil and honey in a large bowl, season liberally and combine to form a paste.
Add the chicken thighs and stir in the bowl so that all of the paste covers the chicken. Cover the bowl with cling wrap and refrigerate for around 30- 40 minutes (I sometimes skip this step when I am low on time, but if you have the time do it. It does help the chicken to absorb the flavor of the spices.
Once chilled remove the chicken from the fridge and place on an over tray. Cook at 180 degrees celsius for 40- 45 minutes or until the juices run clear.
