Brown Sugar Shortbread Recipe

This recipe is great for when you want something sweet and don’t have much at home to work with. It requires only three ingredients (four if you add a could of drops of vanilla) and is quick and easy to make.

Ingredients

1 cup butter (240g), softened
1/2 cup packed brown sugar
2 and 1/4 cups plain flour

First preheat the oven to 160 degrees celsius.

Cream together the butter and the sugar in a mixing bowl. You can use a mixer or do this by hand, just make sure it’s fully creamed together. My house is freezing right now so I had to actually hold the bowl over the heater to soften the butter, brrr.

Once blended you can add a few drops of vanilla, then you need to fold in the flour and mix to combine.  Remember not to over mix as the mixture will end up tough.

Sprinkle flour over a work surface, empty the mixture on to the surface and pull it together in a ball.

Roll the mixture out using a floured rolling pin. Then its time to cut out the shapes. I bought a star and heart cutter recently but before that I was just using a glass or cutting them into squares. It works just as well.

Once you have cut the shapes out place them on a lined baking tray, sprinkle with a bit of brown sugar and put them in the oven for 15- 20 minutes or until slightly brown.

Then you can enjoy them with a nice cup of tea or coffee.
